On Saturday, Alan hosted my family for a delicious bbq and, of course, I was in charge of dessert. I wanted to keep it simple since it was about a 1,000 degrees outside and I was BF’s sous chef, helping with the grill. I usually make this dessert with strawberries as individual strawberry shortcakes, but I mixed it up with a batch of berries. The family loved this simple, perfectly sweet and tart dessert.
6 Biscuits – use any recipe you love (even the old school Bisquik recipe)
After the biscuits cool, cut each one in half.
1 cup heavy cream
1 tsp vanilla extract
1 tbs confectioners’ sugar
In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat!
3 cups berries
Fill each biscuit with whipped cream and berries, voila!
